Can I make banana bread without eggs?

I have perfect bananas for banana bread and everything else.. except eggs! There is crazy road construction and I am trying to avoid going out at all costs if I don't have to.

Any eggless recipes for banana bread? Also, can I add shredded zucchini? Thanks :)

You can leave out the chocolate chips if you don't want/have them.

  • And yes, you can add zucchini. It tastes good that way.

  • I don't know of a bread recipe (though I'm sure there's one out there somewhere), but if you don't get any suggestions, there are these cookies I throw together with old bananas once in a while:

I don't usually have walnuts in the house, and I doctor them up with allspice or some mix of cinnamon/nutmeg/etc - no measurements, just throw the stuff around.

  • I think I've subbed applesauce for eggs before, if that helps

  • You can substitute a half a cup of pumpkin for the eggs, or a half a cup of *real* mayo, not Miracle Whip. If you use the mayo, leave out the vegetable oil or other fat source. You can add grated zucchini, I usually do, or grated carrot also.
