  • Heat up a splash of olive oil, saute up one large clove of minced garlic, throw in a can of diced tomatoes with italian herbs. Let simmer. Toss with whole wheat angel hair pasta, top with shredded parmesan. Don't know the exact calorie count but it's relatively low, cheap, SUPER easy, and delicious.

  • Lentil soup with onions, carrots, and potatoes. So cheap, filling, easy, and healthy.

  • I sometimes make meatless chili with several different kinds of beans. Often I'll toss in some rice or cubed potatoes for the starch.

  • Sort and rinse a bag of your fav dried beans. I usually do pinto beans. Throw thm in the crockpot with water, onion and your fav seasoning. Cook on low 8 hours. Serve them with quinoa.

  • We make a dish called Shakshuka. It's basically tomatoes, onions, sauteed in a skillet. Once it's hot you crack eggs into it, we usually do 1 per person. Serve with some bread.

  • Not really a recipe, because it's not that complicated. Mush up an avocado, add in kalamata olive pieces and some kosher salt, a little lemon juice if you aren't going to eat it right away. Use it as a dip or sandwich filling (or just eat it with a fork for a snack)
