Crustless Sausage Spinach Quiche

1 12-ounce package pork or turkey sausage, thawed (I like the spicy kind)
1 medium onion, chopped
1/4 teaspoon dried oregano
1 10-ounce package frozen chopped spinach, thawed and squeezed dry
1-1/2 cups (6 ounces) Cheddar cheese, shredded
8 eggs
1-1/4 cups milk
1/2 cup pancake mix with buttermilk

Preheat oven to 375 degrees. Grease 11 by 7 inch glass baking dish.

Crumble sausage with onion and oregano into large skillet and brown, adding a few teaspoons of oil if necessary. Stir in spinach and cheese.

Combine eggs, milk, and baking mix, and whisk till all of the yolks are broken and blended in.

Pile sausage mixture in baking dish, spread evenly but do not pack down. Pour egg mixture over.

Bake 35 minutes or until knife inserted in center comes out clean.

Serves 8. I like this because I can cook the sausage and add the spinach and cheese ahead of time, then leave the baking dish in the fridge, and all I have to do at dinnertime is whisk up the eggs, milk, and baking mix, pour it on, and bake.
