It's soooo rich and moist! Mayo replaces the oil and some of the eggs and makes the batter very creamy. I always used to ask my mom to make the cake for my birthday, at least till she quit celebrating it. Serve it with whipped cream instead of frosting.
For one 9 by 13 inch cake:
4 (1 ounce) squares semisweet chocolate
1 cup mayonnaise
1 1/3 cups water
1 teaspoon vanilla extract
1/4 teaspoon baking powder
1 teaspoon baking soda
1 2/3 cups white sugar
2 1/4 cups all-purpose flour
Preheat oven to 350. Grease a 9 x 13 inch pan.
In large bowl, beat sugar, eggs, and vanilla at high speed for 3 minutes, till fluffy. Add mayonnaise and melted chocolate; beat on low to blend.
In another bowl, combine flour, soda, and baking powder. Add flour alternately with water to the chocolate mixture, beating after each addition.
Bake in greased pan for 4
