Red food coloring in icing? Oh crap?

I need to making some cake icing a bright primary red. The thing on the food coloring states 24 drops for a tub of icing, but I've added 70 and it's nowhere close!!! I just read online somewhere that red can get darker over time, as in, if I look in there tomorrow I might just have the color I want (or even too dark??) Does anyone know if this is true?? Or how to make my icing the color I want?

  • Can't help you with the overnight waiting... but have you tried it? I've heard that lots of food dye can eventually make frosting bitter.

  • Go to the cake decorating section and look for Wilton products. Get the gel food coloring, not the liquid food coloring.

  • A little late now, but dye gel tends to give a much more vibrant color.

    Sorry, I'm not sure about letting it sit overnight, but it couldn't hurt to just follow the instructions.

  • Since it tasted okay, your best bet will probably be just to wait and see. If the color is really awful in the morning, will you have time for a backup plan of some kind?

  • really hard to get icing always ends up kind of pink...all I can say is the liquid doesn"t seem as good as the gel or wilton color.
    check the cake decorating group(s) maybe?

  • You are using liquid and the one thing I can tell you is that your icing will be thinner.
    I would get a jar of gel or paste food coloring and a new tub of icing and start again.
