Red beans n' rice with ground beef?

im trying to figure out what im going to do with the beef i took out this morning. my pantry is almost bare because we're going on vacation next week. i have: white rice, a package of red beans n rice, all the fixings for enchiladas, onions, potatoes, condensed soup...

i really dont want to make the usual (spaghetti, meatloaf, hamburgers)

sloppy joes would be nice but i dont have any tomato paste/sauce or even diced tomatoes

any suggestions?

  • Yum. Sounds delicious. You could get a few peppers and fill them with the red beans/rice/beef mixture and roast!

  • Could chunk up the potatoes, add some onion, cooked meat, and bake- like scalloped potatoes and ham.
