What's for dinner?

It's a lazy night. I had burrito stuffing in the freezer--refried beans with ground beef, olives, salsa, canned tomatoes and chilies, etc--so I thawed it out, rolled it up in tortillas, and mixed canned enchilada sauce with sour cream to pour on top. I only have to turn the oven on in this awful heat long enough to get everything hot. Enchiritos, I guess it would be called.

  • Not sure. I'll have to check the menu. At my new job I eat with the residents and a chef prepares all the meals. If I don't like the entree I'll just ask her to make me a turkey sandwich and fruit plate. Too hot to eat heavy
