What causes a hard boiled egg to be so darned hard to peel?

I'm usually pretty good at hard boiled eggs.

These eggs are a 5 minute tedious affair to peel! Tiny little shell piece by piece.

What did I do wrong this time?

  • The age of the egg. The older the egg is, the easier it peels. When they're still 2 weeks out from expiring, that peel isn't coming off for anything.

    You can make it easier if you add baking soda to the water, but taste them before you add any more salt to them if you do.
