Any other banana-based baking recipes (that you've actually tried, not just pinned)?

Tried the one that's oatmeal cookies made from just oats and bananas. Wasn't bad, and I added in some raisins and cinnamon. Looking for more similar ideas if anyone has any?

  • banana nut muffins made these a few weeks ago, they were so good and the coffee gave it an extra oomph.

    also, if you like the classic combo of peanut butter & bananas: peanut butter banana bread

    i hate bananas, but i love them baked in things.

  • Grilled peanut butter and banana sandwiches are good - you can do just plain pb with banana or add honey and/or cinnamon, etc, etc

    You can also saute bananas, with cinnamon, and serve with ice cream - or add extra spices and do a banana foster

    I've done both of those :)

    I've also heard you can freeze bananas and blend them in your blender to make ice cream, but I haven't tried that yet....

  • I like to make this cake with fresh bananas. It's good with white frosting, plain or flavored with rum.

    1 cup butter or shortening
    3 cups sugar
    2 cups mashed bananas (about 4 medium
    4 eggs
    2 teaspoons vanilla
    4 cups flour
    2 teaspoons baking soda
    1 teaspoon salt
    1 cup sour cream

    1. Preheat oven to 350 degrees. Grease a 13 by 9 inch cake pan.

    2. Cream butter or shortening and add sugar. Beat till light.

    3. Add banana, eggs, and vanilla. Beat well.

    4. Combine flour with soda and salt and add to first mixtre, blend.

    5. Add sour cream slowly and beat to blend.

    6. Spread batter in pan. Bake 55 to 60 minutes or till toothpick inserted in center of cake comes out clean. Cool and frost.

    I haven't tried it, but now I'm wondering how that recipe would to for banana muffins.

  • I made bannana pancakes the other day. I had some over ripe bannanas, so I mashed them up, added bisquick, an egg, and milk until it looked right,  and made pancakes
