  • I don't see why not for a little bit. My Mom used to make a potato salad with olive oil, peas & red onion & she would make it early & leave it out until dinner to eat at room temperature & we are all still alive! LOL!

  • I would immerse it in salt water or it will darken.
I would put it in the fridge just because it slows down the deterioration process.

  • It'll start to turn brown. I'm not sure how that affects the flavor, but in terms of visual appearance, I wouldn't leave it out. Even in the fridge, I'd put it in some water to stop/slow the browning.

  • If I had a peel potato I decided not to use I would boil it and put it int eh fridge and make baby food or a quick lunch side with it later.

  • Thanks. My question doesn't make a lot of sense now that I am reading it. That's what I get for having kids I guess.

I peeled a ton of potatoes and my SO cheated and only boiled what we needed for sides for dinner. I was planning on having leftovers. He hates leftovers so he's a little bugger.
