Horseradish root, any help here?

My friend just dropped of 8 dozen oysters, I have some horseradish root, that I want to put in to make my oyster rockefeller, how much? I love it in bloody mary's etc. but am adding it to the spinach and parm cheese before hand, you think a teaspoon for 5 dozen?

  • Can you just add a smidge, taste, and then add more? I know nothing about the particular recipe you're making, but horseradish can get a dish spicy awfully fast.
