Wwyd with 80 lbs of bananas?

My co op this month gave us 80 lbs of bananas, I plan on peeling then freezing the for Popsicles. What else could I do with this many bananas. They are ripe and won't last too long.

  • I say you are giving bread away for Christmas, make a ton and double foil then plastic wrap, and your holiday gifting is done, LOL!

  • My youngest is a banana freak. I told him you had 80lbs of them, his eyes got wide and then he said, "Even I don't love bananas that much!" lol

    Banana bread, peel them and cover them in chocolate and then freeze them. I'm not sure what happens to their texture and appearance if you freeze them and thaw them but maybe you could just peel and freeze some to take out, thaw and eat like a fresh banana? At any rate, I'd think you could freeze some and use them down the road to make banana bread, banana pudding, stuff like that.

  • You can mash them and add a little lemon (to help avoid discoloration) package in the amount you need to make banana bread or cake. You can also make banana bread and freeze it. I do this but cut and wrap individually and then freeze in a larger container. Then I just take out a slice to send to work or school, or a few for breakfast or a dinner snack.
    You can also freeze the whole chunks for when you want to make smoothies.

  • Banana muffins for the freezer, banana cookies for the cookie jar ... there's a lot you could do. And no rush because the browner they are the easier they cook.
