What's for dinner? Update included...

My shrimp and alligator cheesecake with pontchartrain sauce was awesome!! I'll post a pic when I can get on the computer.

We had a tomato salad with it. What was for dinner at your house?

  • I admit some skepticism about the cheesecake LOL!

    I had tacos. There's a wonderful little restaurant down the street that I go to once a week or so. It's a little hole in the wall but the food is great

  • We had Italian style meatloaf (meatloaf with italian seasoning and spaghetti sauce lol), baked potatoes and a mix of cauliflower, broccoli and carrots in butter and seasonings.

  • Pontchartrain sauce recipe:

    5 button mushrooms quartered
    1/2 cup unsalted butter - cut in half
    1 lemon
    1/4 cup white wine
    1 cup heavy cream (40% fat)
    1/2 cup small shrimp or diced larger shrimp
    1 tablespoon minced garlic
    1 bunch parsley chopped
    1 bunch scallions chopped

    Heat pan to high heat. Add 1/2 of room temperature butter. Add mushrooms and sauté. The mushrooms will soak up all of the butter, so shake pan. Once mushrooms are brown, add wine to deglaze. Once wine separates, squeeze lemon and add cream. Reduce cream until thick. Add shrimp, parsley, and scallions. When shrimp is pink and cooked, add garlic and remaining butter.

    It's named after Lake Pontchartrain in LA.
