Do you can/preserve? Help with mistake

I'm canning fruit pie fillings. Blackberry, peach and apple.
I cooked the filling. Ladled into hot jars. Left 1/2 inch head space. Removed bubbles and wiped the rims of the jars.
Water bathed for 20 minutes. The jars i processed did not seal.
What was my mistake?
My lids were not HOT- more like warm.
After timing water bath and turning the burner off I didn't remove the jars from the pan to cool for more than 45 minutes.
What's the most likely mistake for them not sealing?

  • Press on your center, does it stay down and not move? If so it's good. If it moves and pops backup it's bad. You can redo the entire process just heat your fillings back up to a boil, then simmer and rebate. Your cans need to be removed from water as soon as the timer goes off. Good luck.

  • Thanks.
The jars all leaked some filling out. It was a sticky mess.
I put everything in freezer containers and called it a day.
I'm trying it again today with new batches.

  • If the stuff oozed out I'm guessing you overfilled the jars. I've never canned fillings, but pickyourown.org is my go-to site when I have canning questions.
