What's for dinner tonight?

I'm still trying to get dd to eat. Poor thing still doesn't have an appetite. So I let her pick our dinner tonight. Funny girl picked an odd variety. Lol!!

Cajun meat pies, cowboy cavier, and hoppin johns.

  • I don't know. I didn't even realize the time. Probably steak. I'm soooo uninspired. Maybe I will slice a red potato in half and throw it on the grill as well. Maybe some yellow squash too. Yeah. That's probably what I'm going to make.

  • Hm, our dinner doesn't have a name - it's a recipe a friend made up (or at least, I think she made it up, I got it from her at any rate). It's meatballs in a sauce made from gravy mixed with cream cheese and sauteed onions, and you put it over egg noodles. It kinda sounds gross at first thought (gravy with cream cheese?) but it's really super yummy. A bit rich, but really good.

    We are having slow-cooked Italian chicken breasts, (they are falling apart tender ;p) green beans, tossed salad & apple sauce. I decided to cut up my chicken & just have that on my salad.

  • Hoppin Johns

    2 cups rice
    4 slices bacon
    1 medium onion, chopped
    8 ounces frozen black-eyed peas, thawed
    2 cups fresh corn kernels
    10 ounces frozen baby lima beans, thawed
    2 cups chicken broth
    1/2 cup extra-virgin olive oil
    1/4 cup white wine vinegar
    1 1/2 teaspoons seasoned salt
    1 teaspoon ground black pepper

    Cook rice, cook bacon, Reserve drippings in skillet. To the skillet add onions and cook until tender. Add black-eyed peas, corn, lima beans, and chicken broth. Bring to a boil, cover, reduce heat, and simmer for 30 minutes, or until vegetables are tender; drain.

    Whisk vinegar, olive oil salt and pepper well. Toss everything together and voila you have hoppin johns. A lot of people add jalapeños, but dd can't do the heat.
