I soaked potatoes overnight in water and the water turned reddish brown

I chopped some potatoes (peeled) and stored them in water to prevent browning. When I removed them from the water, I noticed the soaking water had turned a reddish brown color. Is this normal? Could it be from the pot?

  • It's normal. It's from the starch in the potatoes.

  • Did you put them in the fridge? Next time use a glass bowl, cover and refrigerate.

  • My mom always put peeled potatoes in a tupperware bowl with a lid in the fridge. They never discolored.

  • I'm not sure about the color, but peeled potatoes will make the storage water feel kind of slippery, for lack of a better word, from the starch in them. It's harmless.

    They were peeled and chopped russet potatoes. The pot (non-stick) was in the fridge with water and the potatoes.
