How do I fix meatloaf I baked without the eggs?

The meatloaf tastes fine but it mushy, unsliceable. Any way to fix this? Can I add bread and rebake?

  • I highly suggest you do not re-bake, because this is going to dry it out and overcook it and you will be left with a rubbery Mess. I suggest you turn this into a version of shepherds pie. Make some mashed potatoes, place the meatloaf in a pan or casserole dish, top with your mashed potatoes and a little cheese and viola!

  • Mix it into gravy, serve over mashed potatoes.

  • Crumble the meat up and add it to cream of mushroom soup or spaghetti sauce, then serve it over pasta or rice or mashed potatoes.

  • I would spoon it onto mashed potatoes and call it done. There's no way to fix it after it's cooked.
