How do you cook your artichokes?

..and what do you dip them in?? Just curious... I cook mine in the pressure cooker with some water for about 20 mins until tender.

I serve them with lemon mayo or just a vinaigrette.

  • Boil on the stove for what seems like forever- then dip in mayo or butter. (Fiance does, I don't dip, i'll just wait for the heart)

Then have a big old stinky pot of green water. lol

  • I don't. Yuck. The taste is okay, I guess, but I can't stand the feeling of scraping those leaves on my teeth. It makes my skin crawl just thinking about it.

  • I steam mine, and then put italian dressing and some baby shrimp in the leaves, I might try the pressure cooker.

  • I have a question for you, how do you determine where to cut the stem off at the bottom? I either make it too long, making it difficult to get to the choke, or too short, and when I cook them the leaves start to fall off the bottom couple of rows, and then makes the choke over cooked before the rest of the leaves get finished. Thanks!

  • I cut it short, but leave like a half inch nub on it. I also cut the top off and cut the pointy part off each leaf with scissors.
