I don't care for flour tortillas.I make everything with corn tortillas.Just cook as you would with flour.They will cook when the inside of the quesadilla is getting hot and melty. Also stacked enchiladas are easy .Use corn.Delish with crockpot chicken with lofat cream cheese and green chilis .Put a bit of mix on the pan ,add a tortilla ,add some filling ,a tortilla ,repeat 3 or 4 times .Sprinkle with cheese .Make another stack .,Bake in oven 10 minutes ...yummy.
Also easily done with seasoned ground beef.Dip tortillas in enchilada sauce ,meat or mix of meat and cheese make stack.Bake. Migas are great on cold nights.
