Can I make a cheese quesadilla with corn tortillas?

I have always used flour tortillas. Delicious. I have 100s of corn tortillas though- would that work?

  • I bought a 72 pack at the store, then my fiance bought another one at the store the next day because he didn't see them at home... So maybe not 100s. Now I am a big fat liar.

  • IMO no, unless you fry them, and make a tostada, I hate uncooked corn tortillas, you could make enchalidas with them that would be yummy!

  • I don't care for flour tortillas.I make everything with corn tortillas.Just cook as you would with flour.They will cook when the inside of the quesadilla is getting hot and melty. Also stacked enchiladas are easy .Use corn.Delish with crockpot chicken with lofat cream cheese and green chilis .Put a bit of mix on the pan ,add a tortilla ,add some filling ,a tortilla ,repeat 3 or 4 times .Sprinkle with cheese .Make another stack .,Bake in oven 10 minutes ...yummy.

    Also easily done with seasoned ground beef.Dip tortillas in enchilada sauce ,meat or mix of meat and cheese make stack.Bake. Migas are great on cold nights.
