I think I've figured it out! Christmas dinner..

Thanks for all the answers I got on my previous question about making something different for Christmas dinner.

I'll be making roast pork tenderloin with a creamy roasted poblano chile sauce.

My thing is now, what sides would be good with this?

  • the recipe for beans and rice I posted last month was really good, if rather profanity laden.

    Also has a recipe for fried plantains, but I haven't tried it yet.  The first two recipes were really good, though, so I don't doubt the plaintains are, too.

  • au gratin potatoes, twice baked potatoes, mexican rice or fideo

    and definitely a salad or green vegetable. I like Ballad's coleslaw suggestion, or a broccoli bacon salad, 3 bean salad, or a tossed green salad with a cilantro ceasar dressing.
