What's for dinner?

I wanted to share this recipe for fish sticks casserole that I use on nights when I have a migraine because it's so easy that I can do it when my head is exploding and all I want to do is crawl in bed.

Fish Stick Casserole

ready in: 1-2 hrs
serves/makes: 4

1 package scalloped potatoes
3 cups water
1 cup milk
2 tablespoons margarine or butter
1 cup frozen peas
1 package (10-12 ounce size) frozen fish sticks

Heat oven to 400 degrees F. Spray 12x8-inch (2-quart) glass baking dish with nonstick cooking spray. Prepare potatoes as directed on package for oven in sprayed baking dish, using water, milk and margarine. Sprinkle potatoes with peas.

Bake at 400 degrees F for 15 minutes. Arrange fish sticks over peas and potatoes. Bake an additional 20 to 25 minutes or until potatoes are tender.

I actually dress it up a little and use potato soup from a box and thick cut baked French fries, and serve a different veggie on the side, but at its most basic, you can do it in your sleep. It's a good college kid survival recipe. That's what we're doing tonight. How about you?
