How do you make really good pancakes from scratch? Mine don't seem to turn out right!

  • Buttermilk pancakes (the best I've ever eaten)
    2 cups flour,
    1 tsp baking soda
    1 tsp salt
    2 TB sugar
    2 eggs
    2 cups buttermilk
    2 TB oil
    Mix dry ingredients, add the rest and mix just until blended, don't overmix. Then heat the griddle. It is good for the mix to sit a few minutes. (If you are using cooking spray, spray it on a cold griddle, of course. ) When a drop of water dropped on the griddle bounces, then pour the batter in the size you want, usually about 4 inches, and cook until some of the bubbles that rise up pop open, another way is when the edges look cooked. Slide the spatula under and flip the pancake over. Cook until it is done.

  • Here is a great recipe for fluffy pancakes
    2 cups of flour
    6 Tablespoons of dry milk
    1/4 cup sugar
    4 teaspoons baking powder
    1 teaspoon salt
    41/2 tablespoons butter(melted)
    2 large eggs
    11/4 cups of water

    chefjen is right, too, overmixing is the devil with any thing with flour in it.
