  • We make loaded nachos, you can make these with cooked/shredded chicken or with cooked ground beef (have also made with crab & shrimp) place a layer of chips on a plate, sprinkle with meat, and cheese....then another layer of chips, meat and cheese, you can also add jalapeno slices, green chillies, taco sauce, or diced tomatoes just depends on what your tastes are. After you have it layered you can just place it in the microwave and heat till the cheese is melted. I have made a bigger serving by placing it on a baking sheet and cooking in the oven. I usually serve with sour cream, salsa and guacamole on the side.

  • This is the way I make them and they're addictive!
    1 lb. Ground beef
    1 pkg. Taco seasoning
    ¾ cup water
    Tortilla chips
1 16 oz can beans (black, pinto, chili beans or refried-with a little water added to make them easier to spread)
1 16oz. package shredded Mexican blend cheese or cheddar
    Shredded lettuce
    Chopped tomatoes
    Chopped green onions
    Chopped avocado

Preheat oven to 350. Sauté ground beef, drain. Add seasoning mix and ¾ cup water. Bring to a boil; reduce heat. Simmer, uncovered 10 minutes, stirring occasionally. Spread tortilla chips over surface of ovenproof platter or baking dish. Spread meat over chips. Next add beans. Spread cheese over top. Bake 15 minutes. On top add lettuce, tomatoes, onions, salsa, avocado, and jalapenos as desired.

  • Layer on a baking sheet: tortilla chips, shredded cheese, pepperoni and giardinaria (pickled vegetables available by the Italian foods/spaghetti sauce). I usually layer about 2 or 3 layers and bake for about 8 minutes at 350, until cheese melts. YUMMY!!!!
