Looking for a hummus recipe...

Anyone make this from scratch? Do you have a lower-fat version if you do?

  • hummus doesn't have much fat. 2
    1 cans chic peas 1 drained, 1 lg clove garlic, t. salt, 2T lemon juice, 1 T Tahini ( sub peanut butter) whirr in food processer until smooth drizzle 1 T of olive oil in at the end for flavor.

  • I got this recipe from Gourmet Magazine a few years back and I've never, ever looked back. This recipe is the perfect blend of flavor and "fluffy". :)


    2 garlic cloves
    1/2 teaspoon salt
    1 (16-ounce) can chick-peas, drained and rinsed
    1/3 cup well stirred tahini
    2 tablespoons fresh lemon juice, or to taste
    1/4 cup olive oil, or to taste

    On a cutting board mince and mash the garlic to a paste with the salt. In a food processor purée the chick-peas with the garlic paste, the tahini, the lemon juice, 1/4 cup of the oil scraping down the sides, until the hummus is smooth. Add water to get it to the consistency you want and add salt to taste. The hummus may be made 3 days in advance and kept covered and chilled.
