  • Being a vegetarian that doesn't eat eggs is a bit extreme for a 5 yr old. Children need a wide variety of foods for proper nutrition. What's right for you, as an adult, may not be right for them.
    Anyway, the cake:
    2 c self-rising flour
    2 c sugar
    1 c water
    1/2 c butter
    1/2 c shortening
    4 tbsp unsweetened cocoa powder
    1/2 c buttermilk
    1 tsp baking soda
    1 tsp vanilla extract
    2 eggs
    1/2 c milk
    4 oz strong brewed coffee
Preheat oven to 350*F. 9x13 inch pan w/ pam.
Combine flour and sugar in a large bowl; set aside.
Put 1/2 cup buttermilk into a large glass; add baking soda, stir to combine, set aside.
In sauce pan over med heat combine water, shortening, butter & cocoa. Stir until melted, then boil 5 min. Add choc mix to dry ingredients; mix well. Add buttermilk baking soda mixture, stir to blended. Add eggs; mix. Add the milk, coffee & vanilla; mix well. Pour into pan. Bake 25 min.

  • Double Chocolate Cake (makes one 8 or 9 inch layer cake)
    1 2/3 c. flour
1 c. sugar (white or brown)
    1/4 c.c cocoa
    1 tsp. baking soda
    1/2 tsp salt
    1 c. water
    1/3 c. vegetable oil
    1 tsp. white vinegar
    1/2 tsp vanilla
    1/2 c. semisweet chocolate chips
Mix dry ingredients in ungreased 8 or 9 inch layer pan Mix in remaining ingredients except chocolate chips. Sprinkle choc chips over batter. Bake in 350 degree oven 35 to 40 min., until toothpick inserted in center comes out clean. DOUBLE RECIPE IF YOU WOULD LIKE A 9 X 13 CAKE.

Chocolate cherry cake: Omit water and chocolate chips. Stir 1/3 c. chopped almonds into flour mix. mix 3/4 c water and 1/4 c maraschino cherry juice. Add to cake along with 1/4 c. chopped maraschino cherries and rest of ingredients.

  • I am not sure but I think you can use like applesauce as a sub for eggs. I think it is hidden best in chocolate cakes and of course you could do an apple spice cake w/ cream cheese icing or even white maybe. It may be like a cup of applesauce. Weight watchers also has something where you can use pumpkin, research those recipes, cause I am not sure. Good luck.

  • Sorry, applesauce can be used as a substitute for oil but not eggs.

  • at % i would find it difficult to believe he actually made this decision.  whoever I see you have some recipes already.  Applesauce will NOT sub for eggs (oil ,it will though)
