My dinner idea: Will this work?

I want to take two chicken breasts, and filet them. Then I want to lay on them some sauted spinach, roasted red peppers and moz. cheese. Roll them up, stick in a skewer and bake at 350 for 30 minutes.

Will this work?
Should I bread them? (I have a tendency to bread everything!)
What should I serve with it?

  • I might go up to 45 mins to make sure the chicken cooks all the way through...or use a meat thermometer. Stuffing meats make them take longer to cook. But sounds yummy!

  • I think it would work, that sounds really good, I prob. Would bread itbecause of the cheese,it might all run out but let me know how it turns out!I might steal that idea! Lol

  • Pound them out first. I think that baking them for that length of time should do it, especially if they are pounded. It sounds delicious. I like the idea of breading them. Will the breading get brown enough at 350 for a half hour?

  • Sounds very yummy to me, although i would not filet them. I would pound them flat & put everything in there raw, it will roll much better. I have made similar recipes, but with different ingredients.

  • Mommybrooke, and Bmat, Thanks I will bread them then! I usually do pound them first to even them out. Bmat, I think the breading will get brown since I have a convection oven and I cook the bread crumbs a little bit in garlic and oil before I use them.

    Samurai, I am not sure what you mean by leaving them raw? When I say "fillet them" I mean just to cut each breast to make the chicken a little thinner. I still would roll them raw. I always fillet them because I like them a little thinner, plus it yields more servings.

  • Ohhh yum! A glass of white wine, maybe some garlic bread. Since you have spinach and red peps maybe a salad or some chilled fresh fruit. Sounds awesome let me know!

  • So I did it and they were great! I highly recommend this to anyone interested in stealing it! I did end up going with a breading and it was for the best. Yum!
