There are a few ways to prepare it. You can grill it, bread it and fry it, stir fry it, marinate it... Its kinda spongy, and it tastes slightly bitter. Its alot like squash. Because its so spongy, it will soak up marinades well, but also soaks up oil too so if you fry it, it absorbs alot of the fat.
One technique some people use to draw out some of the liquid inside the eggplant and make it less bitter is to cut it in half and set it on some salt. The salt draws out some of the bitter flavor and dries it out a bit. I have to say we eat fresh veggies every day, but eggplant isnt something we regularly eat. It only has a shelf life of 2-3 days from the store, IMO. If you grow them fresh they will last longer, im sure.. but we dont eat it often enough to bother.
