  • Leftovers from Sunday dinner...slow cooked beef stew (beef, carrots, potatoes) over rice.

I'm also thinking about making some chicken nuggets w/ veggies and mashed potatoes. May eat the leftovers now because i'm hungry!

  • We're going to my mother in law's house. If we weren't doing that we'd be having baked chicken breasts.

  • Braciole: It's a stuffed flank steak, basically. Alton Brown's recipe:

    http://www.foodnetwork.com/recipes/alton-brown/braciole-recipe/index.html

I am serving that with Penne Pasta cacio e pepe (with cheese and pepper - penne with ricotta, Parmesan, and a lot of black pepper) and a green salad.

It's really easier than it sounds, LOL.

  • Left over pizza from last night.

A while back I found a recipe in one of my cookbooks that my husband loves for 'Spaghetti Pie'. It sounds weird but it really delicious.
