Desperately need recipes for leftover ham!

To accomodate some health issues, I made both ham and turkey for Easter. Everybody ate the turkey and now I have all this leftover ham! I don't want to be eating ham sandwiches for 2 weeks. Can you help?

  • Oh boy! There's tons of yummy things to do with left over ham! Here are some quick ideas:

Save the bone and use it to make a delicious lentil or white bean soup. Add some bits of diced ham in it, too.

Tortellini alla panna - Use cheese stuffed tortellini and prepare a cream sauce or buy a jar of alfredo sauce and mix with sweet peas and diced ham.

Omelettes - saute ham with any other favorite ingredients and then stuff a tasty omelette with it.
Quiche - Classic quiche Lorraine is made with ham and swiss cheese. Buy a pre-made pie crust, whisk a few eggs, add a little milk and add some ham and cheese to the mixture and bake it!
Breakfast Burrito - scramble some eggs and add sauteed ham with onions, diced peppers, tomatoes, and some cheese.
Mac n'Cheese with ham - Whether it's home made or from a box, mix in the ham and maybe some other veg like broccoli or peas to make a hearty meal.

  • Freeze portions for future use so you don't have an overwhelming amount of ham now. My favorite is ham and bean soup- the recipe is on the packages of dried beans in the grocery store. Anything that you put chicken in, you can put ham in, just use less salt.
