This is a home version of my restaurant recipe
OUR BEST SOUTHERN FRIED CHICKEN
3 qts water
1 T salt
1 (2- to 2-1/2 lb.) fryer, cut up
1 tsp seasoned salt
1 tsp poultry seasoning
1 tsp pepper
1 c flour
2 c peanut oil
1/4 c bacon drippings
COMBINE: 3 qts. water & 1 T salt in a large bowl; add chicken. Cover & chill 8 hrs. Drain chicken; rinse with cold water, pat dry.
COMBINE; seasonings; sprinkle half over chicken. Combine rest of mixture & flour in a large zip-top bag. Place 2 pieces of chicken in bag/ seal. Shake to coat. Remove chicken; repeat with remaining chicken.
COMBINE: oil and bacon drippings in deep fryer. Heat to 360 degrees. Add chicken, a few pieces at a time
Cover and cook 6 MINUTES, uncover and cook 9 MINUTES.
Turn chicken pieces; cover and cook 6 MINUTES. Uncover and cook 5-9 MINUTES. Drain on paper towels
