If you froze something past their expiration day?

Would you still thaw it out and if it looked good and smelled good I guess we could cook it right?

For example: Bread I freeze bread I had like 3 loaves in the freezer and the day before I would thaw it out but one day I bought more bread and I usually rotate it but this day my kids offered to put the groceries away that cause one loaf to stay longer than usual anyway I finally got to it and thawed it out only to find the edges kind of hard but not too bad.

Would you still eat it?
I just toasted the bread, toast is crunchy
