Not sure of temp., but it should be cooked until all the pink color is gone I would think.

if you are doing pattys then you should have your stove top on a setting in between med and low just because it takes sausage a little longer to cook through. and there is no temp rule it should be brown in color and the middle should not show any pink. I usually don't do patties I chop it up in a pan and just eat it like that. It's easier.
