  • Not off the top of my head, but when I make crab tacos, I dice tomatoes with all the onion, garlic, cilantro, etc and add diced orange pepper and mango or some fruit and toss in cotija cheese.

  • dice up a large white onion, squeeze the juice of two limes over the onions add salt. put them in the fridge for about 30 mins. while in there, dice 2 tomatoes, 2 jalapenos (i only do 1 don't like it too hot, remove the seeds if you don't want it really hot), cilantro (about half of a bunch). throw the tomatoes, jalapeno and cilantro in w/the onions. stir and there ya go.

  • Here is the salsa recipe--the amount are estimates, go by taste more.

20 Roma tomatoes, chopped or diced
1 md green pepper, chopped or diced
1 yellow onion, chopped or diced
1 bunch or green onions, chopped including greens
    3 garlic cloves, minced
2 tblsp chopped and seeded jalapenos ( I use the canned ones)
Salt, cayenne pepper and cilantro to taste
    Juice of a lime
    A little cider vinegar
    Olive oil

Mix it all together and let sit in the fridge for a couple of hours to blend flavors together. It makes about 6 cups of salsa.
