  • That poor kid! Use tofu instead of eggs. You might ask DianesCakery. She owns a cake shop and deals with this stuff often. Also, consult with the cake decorating/recipe groups on here. Good luck!

  • Here's the rest: berry topping and the reference:

    Berry Topping

    1 (1-lb.) box confectioners sugar
    1/3 cup shortening
    1/2 tsp. salt
    1 tsp. cream of tartar
    2 tsp. water
    1/4 cup blueberry jam
6 strawberries, cut in 1/2 lengthwise

In medium bowl with electric mixer, combine all ingredients except for strawberries. Beat until mixture is smooth, spreading consistency. Frost cooled cupcakes. Top each cupcake with 1/2 strawberry.

Note: These cupcakes are very moist. Grape jam may be substituted for blueberry.
