does anyone know how to make fried eggplant??

  • Basic recipe: Slice eggplant. Roll in beaten egg, coat in fine bread or cracker crumbs, fry in clean oil at 375.

  • shake N Bake will work for a coating but I think I would still panfry it. also slice and salt your eggplant first and put in a colander to drain to remove any bitterness and excess water.

  • I made it one time, I got a egg and beat it and put it in a bowl then I got a plate of flour and set them aside. Then I took the eggplant, washed it and then cut it into thin long slices like those of a pancake.I took the eggplant dipped it into the egg and then the flour and put it into a already greased,oiled frying pan and cooked until browned.Turned out good,I think I will make some again.
