  • Its fajita night =) We have fajitas and watch Lost every wednesday. Instead of doing the mess of all the separate fajita fillings, I just throw it all in one pan....I saute up onions, peppers and mushrooms, throw in some perdue short cuts chicken, 1/2 a jar of salsa and a pack of taco seasoning, I also spice it up with some cajun spice, then just before serving I stir in a tablespoon or 2 of sour cream Serve with warm tortillas. Yummy =) We don't add cheese, and I use the fat free tortillas and light sour cream to help with my diet.

  • chicken stew:
    1 pound boneless, skinless breast cut into 1 inch cubes
    1 tablespoon butter
    potatoes cut into chunks
    carrots (baby if you don't want to slice)
    1 cup chicken broth
    salt/pepper to taste
    onion chopped (amount you like, I use 1/2 large)
    garden beans

    Brown chicken in butter in dutch oven, add broth, potatoes, carrots, onion, salt/pepper, cover and cook over med. high heat on stoveuntil veggies are done, add drained green beans until warm.

  • We're having pasta with meat sauce, salad and garlic bread. It's a quick and easy night because my 17yo works until 10 tonight. If I start the sauce at 9:15 we'll be ready to eat as soon as he walks in the door.

  • I am making a pork lion roast with red potatoes and french bread. I brown the pork roast in bacon grease and put it in a shallow pan with 1 cup water and cook on 350 for 45 min-1hr. It' super easy and comes out so tender. The bacon grease sounds so fatty but it seals in all the juice when you brown it becasue pork tends to dry out easy.
