Looking for some easy, healthy, kid friendly recipes.

My husband has decided finally that his diet needs to change. So he is searching for some meals that are healthy and easy to prepare. We have a seven year old and a 15 month old, and he is alone most nights. So something he can prepare in 30 minutes or less and something the kids will not fuss about eating. Thanks ladies.

  • This is awesome! You may be able to "healthify" your standards by making a few easy changes: replace white rice with brown, replace white pasta with whole wheat, replace white bread with whole grain; replace meat with beans, lentils and tofu; I have a ton of quick dinners that I make on a regular basis.I will list some; let me know if you would like any recipes.
    sweet potato and black bean burritos
    lentil tacos
    southwestern falafel with avocado sauce
    taco salad
    veggie stir-fry with tofu over brown rice
    veggie pot pie
    beans and rice, quesadillas, avocado salad
    pasta with beans, spinach, cheese, sauce
