  • I hate cooking, so anything I cook has to be simple (one dish/one bowl), healthy and delicious. Southwest Falafel is my current favorite.
    Patties
    1 (15 ounce) can pinto beans, drained&rinsed, you can use any bean, canned or or 1.5 cups home cooked
    1/2 cup shredded Monterrey jack cheese
    1/4 cup finely crushed baked tortilla chips
    2 tablespoons finely chopped green onions
    1 tablespoon finely chopped cilantro (I use more, I love the stuff)
    1/8 teaspoon ground cumin (I use a tsp)
    1 large egg white
    1 1/2 teaspoons olive oil
    Spread - I don't use this, I mash an avocado with salsa and plain yogurt
    1/4 cup mashed peeled avocado
    2 tablespoons finely chopped plum tomato
    1 tablespoon finely chopped red onion
    2 tablespoons tofurti sour cream
    1 teaspoon fresh lime juice
    1/8 teaspoon salt
    2 (6 inch) pita's, each cut in half crosswise - I use whole wheat tortillas

  • I'm a southerner, so if it can be deep-fried, we'll happily eat it.

    Ever had a deep-fried chicken fried steak? My husband is hooked on them. They're easy too. Just get some cube steak from the meat department of any grocery store. Cut them into pieces about the size of your palm. Make a simple wet batter out of flour, water, and your favorite spices. Dunk your steaks, and plop them (one at a time) into a deep fryer for about two minutes, then roll them over and fry them for another two minutes or so. I always fix mashed potatoes, gravy, and biscuits to go with them, plus whatever veggie my daughter is in the mood for.

    They're awesome, and if you have any left over, just heat them up and slap them on a hamburger bun for lunch the next day!

  • To prepare patties, place pinto beans in a medium bowl; partially mash with a fork. Add cheese and next 5 ingredients (through egg white) stir until well combined. Form into 4 (1/2 inch thick) oval patties.

    Heat canola oil in a lg nonstick skillet over medium-high heat. Add patties; cook 3 min on each side or until patties are browned and thoroughly heated.

    To prepare spread, while patties cook, combine avocado, tomato, red onion, sour cream, lime juice, and salt. Place one patty in each pita half. Spread about 2 tablespoons of spread over patty in each pita half

  • home made guacamole. It's funny I only like mine now!
    4 avocados
    1/2 white onion diced small
    1/2 tomato diced small
    1/2 fresh jalapeno seeded and washed
    1 clove of garlic uncooked and chopped very fine
    2-3 key limes or 1 lime

    Cut everything up before working with the avocados. After everything is prepared mash the avocado with a fork and mix it with the lime juice. this adds good flavor and helps keep the color nice. Mix everything together and let rest for at least 2 hours at room temperature. Serve with chips or your favorite Latin meal.
