  • Use those new steamer bags, and steam them in the microwave! They are healthier that way and taste good too!

  • Frozen veggies are the greatest time saver; because they exist, I can have dinner on the table in 20 minutes.. i use chopped mixed veggies for stir-fries, soups, stews, pasta salad, etc. I use heat broccoli, mix with noodles and serve with peanut sauce. Frozen corn goes in salads. Spinach goes in pasta dishes, curries, stews, soups, sauces.

  • Veggie Cream Cheesie Casserole


    1 – 16 oz. bag frozen broccoli, cauliflower, carrot mix


    1 red onion sliced thin


    Defrost veggies in microwave and drain. Put into 8x8 dish Slice onion and top veggies with it.


    Top with Sauce.


    Sauce


    1 cube butter


    4-5 Tb. Flour


     8 oz cream cheese


    2 cups milk


    Make a rue. (Let butter and flour get thick and dark) Add 2 cups of milk. Cook until thick and bubbly. Take off stove and andd 8 oz. cream cheese. Mix and pour over veggies.


    Topping:


    2 cups cheddar cheese


    1 Tube crushed Ritz crackers


    1/2 cup butter


    Sprinkle with 2 cups cheddar cheese on top. Take one tube Ritz crackers and smash. Add ½ cup butter in skillet and mix. Put on top. Cook 25 min. at 350 degrees.
