  • Boil chicken breast, chop them into cubes use the same broth you boiled the chicken breast in and strain the broth and add choped up corn tortillias to thicken it up. chop about 1 cup of onion and add the cubed chicken and onion to the broth cook for about 20-25 min. Fry corn tortillia chips set aside on a paper towel and chop up avacado slices or cubed and shred mozzarella cheese. Serve hot and add tortillia chips, avacado, and mozarella as a topping stir and enjoy lol.

  • Tortilla Soup

    6 tablespoons olive oil
    1 large onion, chopped
    4 cloves garlic, minced
    3 medium zucchinis, sliced
    4 cups vegetable broth
2 (16 ounce) cans stewed tomatoes
2 (15 ounce) cans tomato sauce
2 (15 ounce) cans whole kernel corn, undrained
    4 teaspoons ground cumin
    2 teaspoons black pepper
    Tortilla chips
    Grated Cheddar cheese, to taste

Warm olive oil in a large pot set over medium-high heat (warm the pot
first to prevent scorching the oil). When oil begins to shimmer, add onion and garlic; cook until onion pieces are browned and soft. Add zucchini, broth, stewed tomatoes, tomato sauce, corn, cumin and black pepper. Cover pot and bring to a boil; reduce heat and let simmer, covered, for 30 minutes (stirring occasionally). Spoon soup into bowls; top each bowl with tortilla chips and Cheddar cheese.

  • my mom is from mexico and i learned from her, so its very authentic,
put 1 whole chicken in a pot and cover with water add ,4 cloves of smashed garlic, half of a small onion, 1tsp cumin, some epazote sprigs or dried is ok, 2tbs salt, 4 bay leaves, let boil until chicken is tender then shred it or chop it.
mean while soak 2 dried guajillo chiles, 5 chiles de arbole or japones chiles until pliable then de seed and puree, add to the chicken stalk, strain the chicken stalk so that you get all of the solids out of it, throw them away...... then add to the chicken stalk diced carrots, diced celery, 2 cups hominy, 1/2 cup cooked rice, then add the chicken, cut tortillas in strips and fry then until crispy, put the soup in a bowl add some tortillas, and for garnish cilanto, pico de gallo and some queso fresco or cotija cheese, also you could ass crunchy thinly sliced cabbage.
