I hope that you are setting a great example by eating lots of veggies! Without knowing what you have tried, I will just throw ideas out there.
Have them as his first course.
Kids love to dip, so give him a few cut up veggies (zucchini, carrots, jicama,etc.) and hummus or salad dressing; or steamed broccoli with pasta sauce and cheese.
Most kids will eat anything with peanut sauce; I make steamed broccoli and carrots with whole wheat noodles and peanut sauce.
Soups, stews, and chili are all great ways to get kids to eat veggies.
Take him to a store, produce market, or farmers market, and let him pick out a new veggies to introduce to the family. Or go to the library and find a kids cookbook (my favorite is pretend soup) and let him make a vegetable dish for the family; there is also a kids cooking website at www.spatulatta.com
Frozen peas and frozen corn can be fun and tasty.
