Low-carb FAST recipes?

Anyone know of a website with recipes that are low-carb AND fast (like 15-20 minutes)? I need to put together a menu of the sort for grocery shopping for when my hubby is gone... I don't get much time to cook with work and all, and need quick, but low-carb (gestational diabetes) recipes.

Any help would be much appreciated! Or even if there is a group/forum out there of the sort that you know of.

  • Broccoli Chicken Dijon
    * 1/2 cup reduced-sodium chicken broth
    * 1 tablespoon soy sauce
    * 4 cups broccoli florets
    * 1 garlic clove, minced
    * 1 tablespoon olive oil
    * 1 lb boneless skinless chicken breast, cut into thin strips
    * 2 tablespoons Dijon or spicy brown mustard

    Directions: Mix chicken broth and soy sauce; set aside. Cook and stir broccoli and garlic in hot oil in large skillet on medium-high heat until crisp-tender. Remove from skillet; cover to keep warm. Add chicken to skillet; cook and stir 3 to 4 minutes or until cooked through. Add broth mixture; mix well. Bring to boil. Reduce heat to medium-low. Stir in mustard until well blended. Return broccoli mixture to skillet; mix lightly. Cook until heated through, stirring occasionally.

  • Beef & Broccoli
    * 1 tablespoon canola oil
    * 2 cups broccoli, blanched
    * 1/2 cup thinly sliced carrot
    * 1/2 cup onion, wedges
    * 6 ounces sirloin steaks, boneless,strips
    * 1 1/2 tablespoons chicken broth
    * 1 tablespoon soy sauce
    * 1/2 teaspoon cornstarch
    * 1/4 teaspoon Splenda sugar substitute
    * 1/8 teaspoon salt (optional)
    In a 10" skillet heat the oil;add the prepared vegetables. Cook,stirring quickly & frequently until veggies are crisp tender & onions are browned. Stir in the beef strips, cook till desired doneness. In a small bowl, combine the remaining ingredients, stirring to dissolve the cornstarch; add to the beef mixture& cook stirring constantly until sauce is thickened, 2-3 minutes.

    To keep this and the above recipe low carb, eat just like this OR serve over 1/2 c. cooked lentils, NOT RICE. Go to www.recipezaar.com and type in "South Beach" or "low carb"

  • Swiss Steak:
    4 cube steaks
    1 15 oz. can diced tomatoes
    1 Tbsp. diced onion
    1 Tbsp. diced green pepper
    1/2 tsp. Worcestershire sauce
    Brown steaks on both sides in hot oil in pan. Mix rest of ingredients and pour over top of steaks. Cover and cook about 10-15 minutes. Enjoy with a large serving of steamed veggies or a tossed salad.

    Spaghetti sauce, no sugar:
    28 oz. can crushed tomatoes
    2 Tbsp. parsley flakes
    2 Tbsp. instant dry onion flakes
    1 Tbsp. Italian seasoning
    2 tsp. oregano
    1 tsp. minced garlic
    Mix all ingredients in pan, heat to boiling.

    I like the spaghetti sauce served over a baked chicken breast, side dishes of steamed veggies or salad.

    To go low carb, especially with GD, you should cut most breads, pasta, potatoes and rice from your diet. To be sure you meet your nutritional needs get your B vitamins from dry beans, lentils and whole grains.

  • You're very welcome! I've had GD 4 times and I'm now diabetic so I've had to learn a whole new dietary style!
