dessert ideas for non cake people?

I'm having a birthday barbecue for my son,and am making cupcakes for the kids, but most of the adults in my family are non cake eaters. Any ideas? we are having salmon, potato salad, a fruit tray. Did strawberry shortcake last year, looking for something different.

  • I like to keep desserts simple. Some lemon sorbet with sliced strawberries and blueberries, or a strawberry cream cheese pie. For the cream cheese pie you take 2 blocks cream cheese, soften them at room temp for about an hour, and using an electric mixer stir in one can of sweetened condensed milk. Then you can either mix in 1 box frozen (thawed) strawberries in syrup or you can just leave it as is and put the berries on top. Pour into a graham cracker pie crust and chill for a couple hours. serve very chilled.

  • I have an awesome fruit salad that I made one year. It's mango, banana, grapes, strawberries, and blueberries. Just toss with a dressing made of a couple tablespoons each of honey and orange juice, and a teaspoon or so of ground cinnamon.

Just make sure not to give any salad to little ones because of the honey!

Prepare days before company arrives and put in the freezer until ready to serve.
4 cups fine chocolate wafer crumbs (two 8 1/2 oz. boxes)
1 cup melted butter or oleo
    1 quart vanilla ice cream
1 quart of pistachio ice cream
    1 quart chocolate ice cream

Line 3 pie pans with waxed paper. Crush cookies with rolling pin/glass until fine. Combine melted butter/oleo with crumbs and shape into pans with the back of a spoon for the crust. Add
slightly softened ice cream into each mold and place in freezer until firm. Then, stack for a 3-layer cake and sprinkle fresh coconut or flaked coconut over the top. Can use any flavor ice cream--just make it colorful. 3 layers better than 2 layers. Serve the kiddies the left-over ice cream.
