What does it mean to egg wash??

when you paint dough with eggs do you use the whole egg or just the yellow? And what does that do?

  • I will use the whole egg with a bit of water. I believe it is to help make a sort of crust on the outside of the bread.

  • Use the whole egg and about 1/2 cup of water, enough to thin it out and make a watery "wash".

  • I also use the whole egg and some water. It gives the dough a shine.
