Need a recipe for enchiladas!!!!!!!!

How do you make enchiladas? Everyone is having them for dinner lol and I want some too!

  • Actually I just go buy a can of enchilada sauce and follow the recipe on the can.

  • i have a very basic recipe that everyone seems to love. brown some ground beef, saute some white onion and shred some sharp cheddar. in a small fry pan, warm a little oil and dip some corn tortillas in them until they are softened. roll some beef, a little onion and some cheese in the tortilla and put it in a baking pan. repeat until the pan is full. heat up a can of hormel chili and cover the enchiladas with it and some more cheese and a little bit more beef and onion. bake in the oven at 350 until the cheese is melted and there you go, very easy and tasty enchiladas. iy you want cheese enchiladas, omit the beef.

  • -Shred three to four cooked boneless skinless chicken breasts.
    -Mix cooked chicken with one pkg. softened cream cheese, one small can green chiles and diced onion (amount dependant on how much your family likes onion).
    -Spoon into soft taco sized tortillas, roll and place cross ways in a 13x9 pan.
    -Boil together one pkg. chili seasoning and two cups hot water. Pour over rolled enchiladas and top with cheddar cheese. This makes a sauce that bakes into the tortillas really well and isn't overly saucy.
    -Alternate option for enchilada sauce is one cup salsa and one can cream of chicken soup. This makes a creamy sauce if you are not a fan of red enchilada sauce.
    -Bake at 350 degrees 30-45 minutes until cheese is melted. Makes about 10 enchiladas.

  • Zucchini and Cheese Enchiladas
    8 corn tortillas
    Olive oil
    2 med. zucchini, sliced
    1/4 c. onion, chopped
    1 sm. can green chili
    1 can whole pitted black olives
    1/2 to 3/4 lb. Monterey Jack cheese
    Enchilada sauce (recipe follows for homemade sauce)
    Saute zucchini and onions in olive oil. Pour some sauce in the bottom of an oven proof 8 x 11 x 2 inch dish. Heat the tortillas one at a time for approximately 30 seconds in the microwave long enough to soften so they roll without breaking. Too hot or too long, then they get too stiff). Dip warmed tortillas into sauce. Fill with small amounts of zucchini mixture, cheese, olives and chili. Roll the enchilada and place in dish. When you have filled the dish with 8 enchiladas, top the dish with the remaining cheese, olives and chili. Pour the remaining enchilada sauce over the entire dish. Bake 15 to 20 minutes at 350 degrees.

  • Sauce
    1/2 c. onion, chopped
    1 clove garlic, minced
    1 tbsp. olive oil
    1/2 c. vegetable stock
    1 c. tomato puree
    2 tsp. chili powder add more if desired to suit taste
    1 tsp. cumin
    Salt and pepper, to taste
    Saute onion and garlic in oil. Add the remaining ingredients, bring to a boil an simmer for about 1/2 hour. (1 can tomato paste can be substituted for the tomato puree. Add water until you reach the consistency that you like).
