frozen pie crust

I have 1 frozen pie crust left. I need something EASY to make with it, I would prefer a main dish instead of a dessert, but if you have a to die for dessert that only needs 1 crust I would love to hear it. Thanks!

  • pot pie and use the crust to cover just the top.

  • I think there are several pies that only need the one bottom crust, (blackberry, strawberry, chocolate, lemon meringue etc. )

    For a savory dish you could make Quiche. My favorite is Quiche Lorraine. Here's a recipe for that!

    Make the filling and put it into the uncooked pie crust.

    Filling: 2 Tb chopped onion
    ¼ cup butter
    3 Tb flour
    ½ teas. Salt
    1/8 teas. Pepper
    1 Cup milk
    4 eggs
    1 10 oz. spinach (thawed and drained)
    ½ cup bacon
    ½ cup shredded Swiss cheese

    Sauté onion and butter, blend in flour, salt and pepper. Add milk, cook stir until smooth and thick.

    Beat eggs- temper eggs with hot mixture then add into hot mix

    Cook 1 min. Remove from heat. Stir cheese in until melted and add other stuff
    (Spinach, bacon, etc)

    Bake 375 30-40 min or knife is clean when stuck in.

    Anyway, you can put anything you like into a quiche. Just take your favorite cheese, meat and veggie and thorw it in!

  • I make my own crust, but here is my pot pie recipe: Filling:
    1 can cream of mushroom soup
    1 can vegetable broth
    1 small potato, cut into 1/2" cubes
    1 carrot, sliced
    1 large mushroom, sliced
    1 small can corn (I use frozen)
    1 small can peas (I use frozen)
    about 1/4 tsp. each: sage, thyme, & oregano
    Mix all these things together (you can use more or less broth to make the sauce the consistency you want). Cover the bottom of two loaf pans with crust (if you doubled the crust). Pour in the filling, and top with the rest of the crust. Bake at 400 degrees for about an hour.
