what's for dinner... I have chicken, any ideas?

  • We're having a chicken stir fry with broccoli, cauliflower, carrots and peppers and rice with pineapple sauce on the side. Mmmm, can't wait.

  • Roast chicken is easy and good. You didn't say whether the chicken is whole or pieces.

    This is a very tasty recipe that I got from my MIL. It calls for breasts but you can use whatever you have:
    Chicken Supreme

    4 chicken breasts
    1 small box Minute rice
    1 can cream of celery soup
    1 can cream of mushroom soup
    generous sprinkle dried onion soup
    1 1/4 can water

    put rice in bottom of casserole, pour heated celery soup and 1 ½ cup water over. Place chicken on top and sprinkle with onion soup. Heat mushroom soup and remaining water and pour over. Cover with 2 thicknesses of foil and bake 350° 2 hours.

  • ummm sautaded chicken with carmelalized onions!!!

    even better with blue cheese crumbles
    then add a litle mayo and make chicken salad wioth the left overs...

    now i want chicken1
