What goes well with salmon?

I am having some friends over for dinner in a couple weeks and would like to get my meal planned. I know we are having salmon(probably going to try a raspberry marrinated recipe i found) but I dont know what to make with it. BTW one of them is a vegitarian so I need foods she can eat and also no tomatoes(she's allergic). I need it to be easy and quick. Any ideas would be great.

  • Asparagus with hollandaise sauce on them and rice. brown for health.

  • Asparagus, roasted poatoes, and bread. Maybe a side salad with croutons, cucumber, carrots.

  • Why not just make one, vegetarian meal? We are vegetarian, and I don't make a separate meal with meat for my omnivorous friends.

  • I am only making one meal. She is will eat fish which is why we are having salmon. I just want to know what kind of sides would be good with it.

  • I like garlic green beans or roasted potatoes with salmon. That is what I had with it almost every time I ordered it when we lived in Guam.

  • My favorite veggie is probably steamed green beans with lemon juice on the side. I splash lemon juice on mine and then sprinkle sea salt from the grinder.

    I also like to make asparagus - place on cookie sheet, brush with olive oil, grind fresh salt and pepper. Bake at 350 for about 10-15 minutes. Once out of the oven, sprinkle fresh parmesan cheese. I think the serving is 8 asparagus stalks per person.

  • I make salmon a lot with brown rice. A steamed mixture of fresh bell peppers, broccoli, snow peas, asparagus (or any combo of them) would be tasty. A salad with fresh raspberries tossed in it (in lieu of tomatoes).

  • Oh, so she is pescatarian, not a vegetarian
    This is a great salad for a dinner party: Spring Greens With Beets & Goat Cheese
    2/3 C pecan halves
    3 T balsamic vinegar
    1 T water
    1 T sugar
    1/4 C olive oil (use a good extra virgin olive oil, cold pressed)
    2 T maple syrup
    1 t whole grain mustard
    1/8 t salt
    1 5oz pkg. spring mix salad greens
    1 14oz can sliced beets drained (I boiled about 6 beets in 1/2 water, 1/2 apple cider, with a quartered onion)
    1 C crumbled goat cheese
    In a large heavy skillet, cook the pecans, 1 T. vinegar and water over medium heat until nuts are toastd, about 4 minutes. Sprinkle with sugar. Cook and stir 2-4 minutes or until sugar is melted. Spread on foil to cool. In a small bowl combine the oil, syrup, mustard, salt and remaining vinegar. Refrigerate until serving. In a large bowl combine the salad greens and dressing, toss to coat. Divide among 8 salad plates. top with beets, cheese and
