  • Something else you can do with spice cake is make pumpkin CC cookies. You just take 2 cake mixes one big can of pumpkin and chocolate chips. Mix together and back at 325 for about 10-15 minutes

  • I prefer my spice cake with just a little confectioners sugar sprinkled on but will use cream cheese frosting if I have company.

    My spice cake

1 can (15 oz) pumpkin puree (not pie filling)
    1 box spice cake mix
2/3 c. raisins and/or toasted chopped walnuts (optional)

Preheat oven to 350 degrees. Spray glass 13x9 pan with cooking spray. Place puree in large bowl. Using an electric hand mixer, beat for 30 seconds. Add cake mix and mix until well incorporated. Stir in raisins and nuts. Bake for 35 minutes. Cool and frost as desired.
No added fat but stays fresh for 3-5 days.

  • Thank you for the recipe, bocamom!

For frosting for a spice cake I'd say cream cheese frosting.
