  • Dressing:
    3 garlic cloves
    4 anchovy fillets, chopped
    1/4 cup fresh lemon juice
    1 tablespoon Dijon mustard
    1/2 cup olive oil
Salt and freshly ground black pepper
Finely chop the garlic and anchovies in a food processor. Blend in the lemon juice and mustard. With the machine running, gradually blend in the oil. Season the dressing, to taste, with salt and pepper.

  • If you are looking for a vegan version, this one is quite tasty: 3 T. Nutritional Yeast Flakes
    2 T. Tahini
    2 T. Dijon Mustard
    2 cloves of garlic, minced
    3 T. fresh Lemon Juice
    1 T. Soy Sauce
    1/3 c. Water

Place the Nutritional Yeast Flakes , tahini, mustard adn garlic in a medium mixing bowl and stir them together to make a paste. Gradually add the lemon juice, soy sauce, and water, stirring vigorously with a wire wisk until the dressing is very smooth.
